Chicken and Orzo Soup with Garlic and Paprika

Texas ConnectionWe enjoyed making this recipe. It was simple and easy to make. We were surprised by the mint. The orzo pasta serving was perfect. We added spinach, pumpkin seeds, and topped it with parmesan cheese. For a little more heat, we added sriracha sauce. We highly recommend it for a busy couple on a cool evening.Delicious and easy to make!

In a large saucepan, combine the oil, tomato paste and garlic.
Cook, stirring, until several shades darker.
Add the paprika and mint, then cook, stirring, just until fragrant.
Add the chicken, 7 cups water and 2½ teaspoons salt.
Simmer, uncovered, until a skewer inserted into the chicken meets no resistance.
Transfer the chicken to a bowl.
Add the orzo to the pot and cook until al dente.
Shred the chicken.
When the orzo is done, add the chicken and season with salt and pepper.
Serve drizzled with additional oil.
