  1. Chop the onion into about 1-inch chunks, mince the garlic, and dice the jalapeños.

  2. Brown the ground meat in a large pot over medium-high heat, breaking it into pieces. If using stew meat, sear the chunks on all sides.

  3. Add the tomatoes, tomato sauce, onion, garlic, jalapeños, serrano peppers, cumin, chili powder, and salt. Bring to a boil over medium heat, then reduce the heat, cover, and simmer for 1 hour with ground meat or 2 hours with stew meat.

  4. Add the beans, if using, and taste for salt. For a thicker chili, stir in the torn tortilla pieces. Simmer for another 30 minutes.
