  1. Combine the ground beef, 1 cup of cheese, bread crumbs, parsley, garlic, jalapeño, egg, and cumin in a medium bowl. Season with salt and pepper, mix until combined, and form into meatballs.

  2. Heat the oil in a large skillet over medium-high heat. Add the meatballs in a single layer and sear for 2 minutes per side. Transfer to a plate.

  3. Add the onion to the skillet and cook, stirring, until soft, about 5 minutes. Stir in the crushed tomatoes and chipotle in adobo and bring to a boil.

  4. Reduce the heat to medium-low and return the meatballs to the skillet. Cover and simmer until cooked through, about 10 minutes.
